Bonfire night just around the corner, cold dark nights are here! I love this time of the year! Baking cinder toffee reminds me of fireworks as you add the bicarbonate of soda the sugar explodes like a firework! There’s loads of great traditional treats which are eaten this time of year; this is one of my favourite and so much fun to make! Just be careful you don’t leave it on the hob too long or heat the sugar up to fast so it starts bubbling away.
200g Caster Sugar
5 tbsp Golden Syrup
2 tsp Bicarbonate of Soda
- Mix the caster sugar and golden syrup in a deep saucepan and stir over a low heat until all the sugar has melted.
- Increase the temperature to a medium heat and carry on stirring until the mixture begins to bubble, turning an amber colour.
- Remove from the heat and quickly stir in the bicarbonate of soda.
- Pour into a tin and leave to set.
